The Key Organ: Jacobsons Organ
Cats possess a special sensory organ called the Jacobsons Organ or Vomeronasal Organ, located in the roof of the mouth.
This organ detects chemical compounds in the air such as pheromones and scent molecules from other animals or the environment.
It is directly connected to the part of the brain that processes instinct, emotion, and social behavior, giving cats much deeper scent information than ordinary sniffing can.

When a cat encounters an intriguing scent, it may briefly stop breathing through the nose, open its mouth slightly, and draw the scent toward Jacobsons Organ for a more detailed analysis.
